Giuseppe dalla Rosa was born November 1, 1958 in the province of Belluno, Italy. He started his career in 1975 as a “commis de cuisine” and later on he worked in some of the most famous hotels in Italy, such as the Hotel Excelsior in Venice, the Hotel Cristallo in Cortina, the Park Hotel in Siena, the Hotel Villa San Michele and the Hotel Helvetia & Bristol in Florence and the Hotel Principe di Savoia in Milan. For one year he worked in London as Executive Chef of the Italian Embassy.
In 1985, he took a French Cooking Classes course where he had the opportunity to be trained by François Hinault. He participated in several. Food Festivals and chef’s Competition both in Italy and abroad.
He is Chef de Cuisine of the Westin Excelsior in Florence since in 1997. His style is influenced by the availability of an abundance of Mediterranean products combined with simplicity and creativity.
